Thai Sweet Chili Chicken Sandwiches

Thai Sweet Chili Chicken Sandwiches

Ingredients

  • 2 brownberry Multigrain Sandwich Thins rolls
  • 1/4 cup nonfat plain Greek yogurt
  • 1/4 cup Thai sweet chili sauce
  • 1/2 teaspoon fresh orange or lime juice
  • 3/4 cup chopped cooked chicken breast
  • 1/4 cup chopped ripe mango
  • 3 tablespoons grated carrots
  • 3 tablespoons thinly sliced celery
  • 2 1/2 tablespoons chopped red bell pepper
  • 2 tablespoons chopped cashews
  • 1-1/2 tablespoons thinly sliced green onion
  • 1 tablespoon chopped Thai basil or cilantro
  • 1/2 cup packed baby greens or baby spinach
  • 6 thin slices seedless cucumber

Instructions

  1. Stir together yogurt, sweet chili sauce and juice in medium bowl. (Remove and reserve 2 tablespoons.)
  2. Stir in chicken, mango, carrots, celery, bell pepper, cashews, onion and basil (or cilantro); mixing to combine.
  3. Spread reserved yogurt mixture on cut sides of the Sandwich Thins rolls.
  4. Layer the greens evenly on the bottom halves of the rolls.
  5. Top each with 1/2 the chicken mixture and cucumber slices.
  6. Add the top halves of the rolls. 
  7. Enjoy!
