Balsamic Herbed Tofu, Tomato, Pesto and Kale Sandwich

Ingredients

  • 4 slices of brownberry 100% Whole Wheat bread
  • 4 oz. of herbed tofu, sliced and pressed to remove excess water
  • 2 tsp. pesto
  • 2 tsp. balsamic syrup
  • 6-8 slices, roma tomato
  • 2 large kale leaves, stem removed

Instructions

  1. Lay two slices of bread on a cutting board. Spread each slice with 1 teaspoon of pesto.
  2. Top with equal amounts of tofu.
  3. Drizzle the tofu with equal amounts of balsamic syrup.
  4. Top with tomato slices, kale and the additional sliced of bread.
  5. Cut in half and serve.
  6. Enjoy!
