Beet and Feta Toast

Ingredients

2 slices of Brownberry White bread

6 oz of beets; cooked

1 tbsp. extra virgin olive oil

1 tsp. fresh orange or lemon juice

2 tsp. vinegar
-
3 oz. feta; crumbled
-
orange zest; for garnish
Directions
- Mix together olive oil, orange juice, and vinegar in a medium mixing bowl.
- Dice beets and fold into mixture.
- Smash all ingredients together using a fork or potato masher.
- Add in feta cheese and season with pepper, if desired.
- Place beet and cheese mixture on 4 slices of toasted bread and top with orange zest.
- Serve and enjoy!
