Ingredients
- 1 brownberry 100% Whole Wheat Sandwich Thins roll
 - 1 6oz. chicken breast, chopped
 - 1/2 bunch scallions
 - 6 walnuts, crumbled
 - 2 oz. cottage cheese
 - 1 oz. pickled jalapeños, half chopped and half sliced
 - 4 cloves roasted garlic
 - 3 oz. arugula
 - 1 whole local organic ripe peach
 - salt, to taste
 - black pepper, to taste
 
Instructions
- Mix together the chopped chicken, scallions, crumbled walnuts (leave half), chopped jalapeños, cottage cheese, roasted garlic and season with salt and pepper.
 - Toast both slices of the roll and spread the chicken salad mixture onto one piece.
 - Slice the peach into small slivers and mix with the arugula, remaining walnuts and sliced jalapeños and place on top of the chicken salad.
 - Lay the other half of roll on top and serve immediately.
