Ingredients

  • 2 slices of brownberry 100% Whole Wheat bread
  • 1/2 avocado, mashed
  • 1/2 cup cashews, soaked overnight, drained, and blended into a fine paste
  • 4 thick slices zucchini, grilled
  • 4 thick slices Portobello mushroom cap, grilled
  • 2 slices beefsteak tomato
  • 1 half roasted red pepper
  • 1 small handful spinach
  • salt and pepper to taste

Instructions

  1. Take 2 slices of bread.
  2. On one side of one slice, spread your mashed avocado.
  3. On one side of second slice, spread your blended cashew paste.
  4. Place both slices of bread (topping side up) on a heated grill.
  5. On slice with cashew paste, layer grilled mushrooms, zucchini, red pepper, tomatoes, and top with spinach.
  6. Place avocado bread on top of sandwich (avocado side facing in).
  7. Turn sandwich until fully heated and golden brown on both sides.
  8. Enjoy this nutrient rich, savory, creamy, crunchy, flavorful, toasty sandwich creation!
