Ingredients

2 Brownberry Multigrain Sandwich Thins rolls

8 ounces kidney beans
-
2 tablespoons tomato, diced

2 green chiles, minced

1 tablespoon chili powder

1 tablespoon green onion, chopped & divided

1 teaspoon cumin
-
1 teaspoon paprika
-
1 teaspoon red pepper flakes

8 ounces onions, diced

1 teaspoon cayenne
-
1 teaspoon salt
-
1 teaspoon pepper

16 ounces chicken, cooked and shredded

2 tablespoons Cheddar cheese, shredded
Directions
- 1. In a medium pot over low heat, combine kidney beans, diced tomatoes, minced green chilies, chili powder, ½ tablespoon green onions, cumin, paprika, red pepper flakes, diced onions, cayenne, salt and pepper.
- Stir until well combined (approximately 3-5 minutes).
- Add in chicken and simmer until hot, stirring occasionally (approximately 3-5 minutes).
- 2. Place desired amount of chicken mixture on each Sandwich Thins bottom, and sprinkle with 1 tablespoon of cheese and remaining green onions.
- Cap with Sandwich Thins lids and enjoy!
